Anna and Frankie’s meatballs…..

These meatballs are from Raos Restaurant.  I have tried other versions, but these are the best I have ever had.  My family loves these and I make them often.  Here is the condensed recipie:

1 pound ground lean beef

1/2 pound each of ground veal and pork

2 eggs

1 cup of freshly grated Pecorino Romano cheese

Bunch of chopped Italian parsley

Garlic, peeled and minced…1 or 2 cloves

2 cups of good bread crumbs…..make your own using fine quality Italian bread and a food processor. The better the bread, the beter the bread crumbs

2 cups lukewarm water

Salt & pepper to taste

While combining everything, add the water slowly to the mixture.  Shape into balls of your desired size and brown in a medium high heat saute pan with olive oil.  Lower cooked meatballs into simmering Marinara Sauce.
