Dip your chicken breasts or thighs in flour, eggs and breadcrumbs mixed with parsley, sage, rosemary and thyme. Saute on medium high heat in lots of good olive oil. You want to get a nice brown crispy coating.
While your penne is cooking, saute minced garlic, shallots and cut up zuchini in saute pan over medium high heat in good olive oil. It should all be done in 10 minutes. Add parmesan cheese and fresh oregano or basil.
Cooking Tip: Add 1/2 cup of the pasta water at the end. It brings all the ingredients together creating a sauce. I do this last step with all my Pasta dishes.
