A little Moroccan, a little Turkish inspired. Here is my recipe….
In a small bowl, mix the following:
1/2 tsp of Za’atar, 1/2 tsp pepper
1 1/2 tsp each of kosher salt, sweet paprika, grounds cumin, ground coriander, finely chopped tarragon, minced garlic
1 minced shallot
Mix well and add to 1 1/2 pounds of a beef and lamb mix. Add 1 egg to bring it all together and form into patties that are more oval shaped than round as in hamburgers. But, you can shape them as you like. Grill or saute them in olive oil 4 – 5 minutes a side
Serve with a yogurt style herb sauce with mint…and perhaps some cucumbers on the side.
